  • 4 fillets Salmon skin-on recommended
  • 2 tablespoons Olive Oil

For the Peach Bourbon Glaze
  • 2 cups Peaches fresh, frozen, or canned
  • 1/2 cup Bourbon or apple juice as non-alcoholic substitute
  • 1/4 cup Brown Sugar
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Dijon Mustard
  • 2 cloves Garlic minced
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Smoked Paprika or regular paprika
  • 1/4 teaspoon Red Pepper Flakes optional
For Garnish
  • 2 tablespoons Fresh Parsley chopped
  • 2 wedges Lemon for serving

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat the salmon fillets dry, drizzle with olive oil, and season with salt and black pepper.
  3. In a medium saucepan, combine diced peaches, bourbon, brown sugar, soy sauce, Dijon mustard, minced garlic, lemon juice, and smoked paprika. Simmer for 5-7 minutes while mashing the peaches.
  4. Drizzle the glaze over the salmon fillets, reserving some for serving.
  5. Bake the salmon for 12-15 minutes, broiling for an extra 1-2 minutes if desired.
  6. Remove from oven and drizzle reserved glaze on top. Garnish with parsley and serve with lemon wedges.
