Ingredients
  

For the Peppers
  • 4 Orange Bell Peppers Substitute with yellow or red if needed.
For the Filling
  • 1 tbsp Olive Oil For browning the meat and veggies.
  • 1 lb Ground Beef or Turkey Feel free to swap in lean turkey.
  • 1 Chopped Onion Yellow or white onions are ideal.
  • 2 cloves Minced Garlic Fresh garlic will ensure maximum flavor.
  • 1 can Diced Tomatoes (Canned, undrained)
  • 1 cup Cooked Rice Brown rice or quinoa are excellent alternatives.
  • 1 tsp Dried Oregano Can also use Italian seasoning.
  • to taste Salt and Black Pepper Adjust to taste as you go.
  • 1 cup Shredded Cheddar Cheese Consider Monterey Jack or cotija for a twist.

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Cut off the tops of the bell peppers, remove seeds and membranes, and carve out jack-o'-lantern faces.
  3. In a skillet, heat olive oil and brown the ground beef or turkey for about 7-10 minutes.
  4. Add the chopped onion and sauté until soft, about 5 minutes. Then add minced garlic and cook for an additional minute.
  5. Stir in the diced tomatoes, cooked rice, oregano, salt, and pepper and simmer for about 5 minutes.
  6. Remove from heat and mix in ½ cup of shredded cheddar cheese until melted.
  7. Stuff the peppers with the filling, packing generously, and fit the tops back on if desired.
  8. Cover with foil and bake for 30 minutes. Then remove foil, add more cheese, and bake uncovered for another 10-15 minutes.
