- Preheat the oven to 375°F (190°C).
- Cut off the tops of the bell peppers, remove seeds and membranes, and carve out jack-o'-lantern faces.
- In a skillet, heat olive oil and brown the ground beef or turkey for about 7-10 minutes.
- Add the chopped onion and sauté until soft, about 5 minutes. Then add minced garlic and cook for an additional minute.
- Stir in the diced tomatoes, cooked rice, oregano, salt, and pepper and simmer for about 5 minutes.
- Remove from heat and mix in ½ cup of shredded cheddar cheese until melted.
- Stuff the peppers with the filling, packing generously, and fit the tops back on if desired.
- Cover with foil and bake for 30 minutes. Then remove foil, add more cheese, and bake uncovered for another 10-15 minutes.
