  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth
  • 8 small corn or flour tortillas

  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until cooked through and no longer pink in the center.
  2. Remove the chicken from the skillet and let it rest for a few minutes. While it rests, combine the chili powder, cumin, garlic powder, onion powder, paprika, salt, and black pepper in a small bowl.
  3. Slice the chicken into thin strips and return it to the skillet. Sprinkle the spice mixture over the chicken and pour in the chicken broth. Stir to combine and cook for an additional 2-3 minutes until heated through and well coated with the spices.
  4. Warm the tortillas in a dry skillet or microwave for about 30 seconds until pliable.
  5. Assemble the tacos by placing a portion of the chicken mixture on each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and salsa. Garnish with fresh cilantro if desired.
