Ingredients

- 4 cups of cubed watermelon
- 4 ounces of crumbled goat cheese
- 1/4 cup of fresh mint leaves, chopped
- 1/4 cup of balsamic glaze
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cubed watermelon and crumbled goat cheese.
- Gently fold in the chopped mint leaves, being careful not to break the cheese too much.
- Drizzle the olive oil and balsamic glaze over the salad.
- Season with salt and pepper to taste, then toss everything together until well mixed.
- Serve immediately, or chill in the refrigerator for about 30 minutes to enhance the flavors.

- For added crunch, toss in some toasted walnuts or pecans.
