Ingredients

  • 1 tablespoon freshly grated ginger
  • 2 tablespoons lime juice (about 1 lime)
  • 2 tablespoons honey or agave syrup (adjust to taste)
  • 2 cups sparkling water
  • Ice cubes
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a blender, combine the cubed watermelon, grated ginger, lime juice, and honey or agave syrup. Blend until smooth.
  2. Strain the mixture through a fine mesh sieve into a large pitcher to remove any pulp, pressing down with a spatula to extract as much juice as possible.
  3. Fill glasses with ice cubes and pour the watermelon ginger juice over the ice, filling each glass about two-thirds full.
  4. Top each glass with sparkling water, stirring gently to combine.
  5. Garnish with fresh mint leaves if desired, and serve immediately.
