- 4 boneless, skinless chicken breasts (about 1.5 pounds)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 cup heavy cream
- 1 cup fresh spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped (not in oil)
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon red pepper flakes (optional)
- Fresh basil for garnish (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt, black pepper, garlic powder, and Italian seasoning on both sides.
- Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F. Remove the chicken from the skillet and set aside.
- In the same skillet, add the heavy cream, stirring to combine with the drippings. Bring to a simmer, then add the chopped spinach, sun-dried tomatoes, Parmesan cheese, and red pepper flakes if using. Stir until the spinach wilts and the cheese melts, about 2-3 minutes.
- Return the chicken to the skillet, spooning the sauce over the top. Let it simmer for an additional 2-3 minutes to heat through.
- Serve hot, garnished with fresh basil if desired.

- For a lighter version, substitute half of the heavy cream with chicken broth.
- Add sliced mushrooms or bell peppers to the sauce for extra vegetables and flavor.
