Turkish Stuffed Poached Apricots are a delightful treat made with tender poached apricots stuffed with a sweet and nutty filling.
Ingredients

- 2 cups dried apricots
- 2 cups water
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- 1/2 cup walnuts, finely chopped
- 1/4 cup raisins
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup honey
Instructions
- In a medium saucepan, combine the dried apricots and water. Bring to a boil over medium heat, then reduce the heat and simmer for about 15 minutes, or until the apricots are plump and tender. Remove from heat and let cool slightly.
- In a separate bowl, mix together the chopped walnuts, raisins, cinnamon, and nutmeg.
- Carefully open each apricot and stuff with the walnut mixture.
- In the same saucepan used for the apricots, combine the sugar, vanilla extract, lemon juice, and honey. Stir until the sugar dissolves.
- Return the stuffed apricots to the saucepan and simmer gently for an additional 10 minutes, allowing the flavors to meld.
- Remove from heat and let cool before serving.
Notes
- For a richer flavor, consider adding a pinch of salt to the stuffing mixture.
- You can also substitute almonds for walnuts or use dried cherries instead of raisins for a different taste.
