A refreshing and vibrant Sweet Corn Salad perfect for summer gatherings.
Ingredients

- 2 cups fresh sweet corn (about 4 ears, cooked and kernels removed)
- 1 cup cherry tomatoes, halved
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice (about 2 limes)
- 2 tablespoons olive oil
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cumin (optional)
Instructions
- In a large mixing bowl, combine the sweet corn, cherry tomatoes, red bell pepper, red onion, and cilantro.
- In a small bowl, whisk together the lime juice, olive oil, honey, salt, black pepper, and cumin (if using) until well combined.
- Pour the dressing over the corn mixture and toss gently to coat all the ingredients evenly.
- Taste and adjust seasoning if necessary, adding more salt or lime juice as desired.
- Let the salad sit for at least 15 minutes to allow the flavors to meld. For best results, chill in the refrigerator for 30 minutes before serving.
Notes
- For a spicy kick, add 1 diced jalapeño or a pinch of cayenne pepper to the salad.
- Substitute black beans for added protein and fiber, or mix in avocado for creaminess.
