- 2 large eggs
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup white chocolate chips (or semi-sweet chocolate chips)
- Powdered sugar, for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the strawberry cake mix, eggs, vegetable oil, and vanilla extract. Mix until well combined and a soft dough forms.
- Gently fold in the white chocolate chips until evenly distributed throughout the dough.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops look slightly cracked. Do not overbake.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- If desired, dust the cooled cookies with powdered sugar before serving.

- For a fun twist, add 1/2 cup of chopped fresh strawberries to the dough for extra flavor and texture.
