Description
A delicious and healthy salad featuring baked salmon glazed with a sweet and tangy strawberry balsamic sauce, served on a bed of mixed greens.
Ingredients

- 2 (6-ounce) salmon fillets
- 1 cup fresh strawberries, hulled and sliced
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 4 cups mixed salad greens (such as spinach, arugula, and romaine)
- 1/4 cup crumbled feta cheese
- 1/4 cup sliced almonds
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Place the salmon fillets on the prepared baking sheet and season with salt and pepper.
- In a small saucepan over medium heat, combine the balsamic vinegar, honey, and Dijon mustard. Bring to a simmer and cook for about 5 minutes, until slightly thickened. Remove from heat and stir in the olive oil.
- Brush the balsamic glaze over the salmon fillets.
- Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork.
- While the salmon is baking, prepare the salad by combining the mixed greens, sliced strawberries, feta cheese, and sliced almonds in a large bowl. Drizzle with any remaining balsamic glaze and toss gently to combine.
- Once the salmon is done, remove it from the oven and let it cool for a few minutes. Serve the salmon on top of the salad.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the balsamic glaze.
- To make it a complete meal, serve with a side of quinoa or brown rice.
