Delicious Sriracha Bacon Bleu Cheese Breakfast Toasts topped with eggs, perfect for a hearty breakfast.

- 8 slices of whole grain bread
- 8 ounces of cooked bacon, chopped
- 4 ounces of crumbled bleu cheese
- 4 large eggs
- 1 tablespoon of Sriracha sauce (plus extra for drizzling)
- 2 tablespoons of unsalted butter
- Salt and pepper to taste
- Fresh chives, chopped (for garnish)
Instructions
- Preheat your oven to 400°F. Arrange the slices of bread on a baking sheet and toast them in the oven for about 5-7 minutes, or until golden brown.
- In a skillet over medium heat, melt the butter. Crack the eggs into the skillet and cook to your desired doneness (sunny side up, over easy, etc.). Season with salt and pepper.
- While the eggs are cooking, mix the chopped bacon, bleu cheese, and Sriracha sauce in a bowl until well combined.
- Once the bread is toasted, remove it from the oven and evenly distribute the bacon and bleu cheese mixture on top of each slice.
- Return the baking sheet to the oven and bake for an additional 5 minutes, or until the cheese is slightly melted.
- Remove from the oven and top each toast with a cooked egg. Drizzle with additional Sriracha sauce and sprinkle with chopped chives before serving.
Notes
- For a milder flavor, substitute the bleu cheese with feta or goat cheese.
- Add sliced avocado on top for extra creaminess and healthy fats.
