Description

A delicious twist on a classic grilled cheese sandwich, featuring a creamy spinach and artichoke dip filling.


Ingredients

  • 2 slices of sourdough bread
  • 2 tablespoons unsalted butter, softened
  • 1/2 cup fresh spinach, chopped
  • 1/2 cup canned artichoke hearts, drained and chopped
  • 1/4 cup cream cheese, softened
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine the chopped spinach, artichoke hearts, cream cheese, mozzarella cheese, Parmesan cheese, garlic powder, salt, and pepper. Mix until well combined.
  2. Spread 1 tablespoon of softened butter on one side of each slice of sourdough bread.
  3. Place one slice of bread, buttered side down, in a skillet over medium heat.
  4. Spread the spinach and artichoke mixture evenly on top of the bread in the skillet.
  5. Top with the second slice of bread, buttered side up.
  6. Cook for about 3-4 minutes until the bottom slice is golden brown. Carefully flip the sandwich and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
  7. Remove from the skillet, let it cool for a minute, then slice in half and serve warm.

Notes

  • For a crispier sandwich, use a panini press instead of a skillet.
  • You can also add cooked bacon or shredded chicken to the filling for extra flavor and protein.
  • For a lighter version, substitute Greek yogurt for the cream cheese.
