Ingredients

- 3 cups watermelon, cubed
- 1 cup cucumber, thinly sliced
- 1/2 cup red bell pepper, thinly sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup roasted peanuts, chopped
- 2 tablespoons lime juice
- 1 tablespoon fish sauce
- 1 tablespoon honey
- 1 teaspoon chili flakes (adjust to taste)
- Salt to taste
Instructions
- In a large bowl, combine the cubed watermelon, cucumber, red bell pepper, red onion, cilantro, and mint. Gently toss to mix the ingredients evenly.
- In a small bowl, whisk together the lime juice, fish sauce, honey, chili flakes, and a pinch of salt until well combined.
- Pour the dressing over the salad and toss gently to coat all the ingredients.
- Sprinkle the chopped roasted peanuts on top for added crunch.
- Serve immediately or refrigerate for about 30 minutes to allow the flavors to meld before serving.

- For a vegan option, substitute fish sauce with soy sauce or tamari.
