A refreshing and spicy salad combining watermelon with Thai flavors, perfect for summer.
Ingredients

- 3 cups watermelon, cubed
- 1 cup cucumber, thinly sliced
- 1/2 cup red bell pepper, thinly sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup roasted peanuts, chopped
- 1 tablespoon lime juice
- 1 tablespoon fish sauce
- 1 teaspoon honey
- 1 teaspoon chili flakes (adjust to taste)
- Salt to taste
Instructions
- In a large bowl, combine the watermelon, cucumber, red bell pepper, red onion, and cilantro. Toss gently to mix the ingredients without breaking the watermelon cubes.
- In a small bowl, whisk together the lime juice, fish sauce, honey, chili flakes, and salt until well combined.
- Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
- Let the salad sit for about 10 minutes to allow the flavors to meld.
- Just before serving, sprinkle the chopped roasted peanuts on top for added crunch.
Notes
- For a vegetarian version, substitute fish sauce with soy sauce or tamari.
- Add diced avocado for creaminess or substitute the watermelon with cantaloupe for a different flavor profile.
