  • 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons fresh ginger, minced
  • 4 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 2 tablespoons vegetable oil
  • 1/4 cup green onions, chopped (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. In a large bowl, combine the chicken pieces, minced ginger, minced garlic, soy sauce, honey, rice vinegar, sesame oil, and red pepper flakes. Mix well to ensure the chicken is evenly coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken along with the marinade. Cook for about 8-10 minutes, stirring occasionally, until the chicken is cooked through and has a nice glaze.
  3. Once the chicken is cooked, remove it from heat. Garnish with chopped green onions and sesame seeds before serving.
  4. Serve hot over steamed rice or with stir-fried vegetables.
