- 2 cups cooked chicken, shredded
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 large flour tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
Instructions
- Heat olive oil in a skillet over medium heat.
- Add sliced bell pepper and onion, sauté until softened.
- Stir in shredded chicken, chili powder, cumin, garlic powder, paprika, salt, and pepper. Cook until heated through.
- Place a tortilla in a separate skillet over medium heat.
- Sprinkle half of the tortilla with cheese, then add a portion of the chicken mixture on top.
- Fold the tortilla in half and cook until golden brown, then flip to cook the other side.
- Repeat with remaining tortillas and filling.
- Slice and serve with your favorite toppings.
