Description

Spicy Blackened Chicken Sliders are a delicious and bold-flavored dish featuring marinated chicken thighs cooked to perfection and served on slider buns with spicy mayo, lettuce, and tomato.

  • 1 pound boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 teaspoons smoked paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (for extra heat, optional)
  • 8 slider buns
  • 1 cup lettuce, shredded
  • 1/2 cup tomato, sliced
  • 1/2 cup mayonnaise
  • 1 tablespoon hot sauce (adjust to taste)

Instructions

  1. In a large bowl, combine olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, dried oregano, salt, black pepper, and additional cayenne pepper if desired. Mix well to create a spice rub.
  2. Add the chicken thighs to the bowl and coat them evenly with the spice mixture. Let the chicken marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).
  3. Preheat a grill or skillet over medium-high heat. Cook the chicken thighs for about 5-7 minutes per side, or until the internal temperature reaches 165°F and the chicken is nicely charred.
  4. While the chicken is cooking, mix mayonnaise and hot sauce in a small bowl to create a spicy mayo.
  5. Once the chicken is cooked, remove it from the heat and let it rest for a few minutes. Slice the chicken into smaller pieces that will fit on the slider buns.
  6. To assemble the sliders, spread a layer of spicy mayo on the bottom half of each slider bun. Add a piece of blackened chicken, followed by shredded lettuce and a slice of tomato. Top with the other half of the bun.

Notes

  • For a milder version, reduce the amount of cayenne pepper in the spice rub and omit the hot sauce from the mayo.
