- 1 pound ground beef
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (10 ounces) diced tomatoes with green chilies
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups cooked rice
- 1 cup shredded cheddar cheese
- 1 cup crushed tortilla chips
Instructions
- Preheat the oven to 350°F.
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- Add the chopped onion, bell pepper, and garlic to the skillet and sauté until the vegetables are tender, about 5 minutes.
- Stir in the black beans, corn, diced tomatoes, chili powder, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes.
- In a large mixing bowl, combine the cooked rice with the beef and vegetable mixture. Stir until well combined.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Sprinkle the shredded cheddar cheese evenly over the top, followed by the crushed tortilla chips.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Let cool for 5 minutes before serving.
Notes
- For a spicier version, add diced jalapeños to the beef mixture.
- You can substitute quinoa for rice for a healthier grain option.
