Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, oregano, salt, and black pepper. Mix well to create a marinade.
  3. Add the chicken thighs to the bowl and toss them in the marinade until they are evenly coated. Let them marinate for at least 15 minutes (or up to 2 hours in the refrigerator for more flavor).
  4. Arrange the marinated chicken thighs in a single layer on a baking sheet lined with parchment paper.
  5. Drizzle the lemon juice over the chicken.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and has an internal temperature of 165°F (75°C).
  7. Remove from the oven and let the chicken rest for 5 minutes before slicing. Garnish with chopped parsley before serving.

Notes

  • For a spicy kick, add ½ teaspoon of cayenne pepper to the marinade.
