- 1 pound radishes, trimmed and halved
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F.
- In a large bowl, combine the halved radishes, olive oil, minced garlic, thyme, rosemary, salt, and pepper. Toss until the radishes are evenly coated.
- Spread the radishes in a single layer on a baking sheet.
- Roast in the preheated oven for 20-25 minutes, or until the radishes are tender and slightly caramelized, stirring halfway through.
- Remove from the oven and let cool for a few minutes.
- Garnish with fresh parsley before serving.
Notes
- For a spicy kick, add a pinch of red pepper flakes to the seasoning mix.
