A delicious side dish featuring baby potatoes roasted in garlic butter and topped with Parmesan cheese.

- 2 pounds baby potatoes, halved
- 1/4 cup unsalted butter, melted
- 1/4 cup grated Parmesan cheese
- 1 tablespoon minced garlic (about 3 cloves)
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the melted butter, minced garlic, oregano, thyme, salt, and black pepper. Stir well to combine.
- Add the halved baby potatoes to the bowl and toss until they are evenly coated with the garlic butter mixture.
- Spread the coated potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender, stirring halfway through for even cooking.
- Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese over the hot potatoes. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
- Once done, remove from the oven and garnish with fresh parsley before serving.
Notes
- For extra flavor, add a pinch of red pepper flakes to the garlic butter mixture for a spicy kick.
- Try using different types of cheese, such as cheddar or mozzarella, for a unique twist on the flavor profile.
