Description
A flavorful roasted bone-in chicken dish seasoned with herbs and lemon.
Ingredients
Scale
- 4 bone-in, skin-on chicken breasts (about 2.5 pounds total)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 lemon, sliced
- Fresh herbs (optional, for garnish)
Instructions
- Preheat the oven to 425°F.
- Pat the chicken breasts dry with paper towels and place them in a large baking dish.
- Drizzle the olive oil over the chicken and rub it evenly on all sides.
- In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, thyme, and rosemary. Sprinkle the seasoning mixture over the chicken breasts, ensuring they are well-coated.
- Arrange the lemon slices on top of and around the chicken in the baking dish.
- Roast in the preheated oven for 35-45 minutes, or until the internal temperature reaches 165°F and the skin is golden brown and crispy.
- Remove from the oven and let the chicken rest for 5-10 minutes before serving. Garnish with fresh herbs if desired.
Notes
- For extra flavor, marinate the chicken in the olive oil and spices for a few hours or overnight before roasting.
- Try adding vegetables like carrots, potatoes, or Brussels sprouts to the baking dish for a complete one-pan meal. Adjust cooking time as needed based on the size of the vegetables.
