Description

Ingredients

  • 1 cup granulated sugar
  • 1 cup water
  • 1 (3-ounce) package strawberry gelatin
  • 1 (8-ounce) container whipped topping, thawed
  • 1 cup mini marshmallows
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. In a medium saucepan, combine the chopped rhubarb, sugar, and water. Bring to a boil over medium heat, stirring occasionally. Once boiling, reduce heat and simmer for about 10 minutes, or until the rhubarb is tender.
  2. Remove the saucepan from heat and stir in the strawberry gelatin until fully dissolved. Allow the mixture to cool to room temperature.
  3. Once cooled, fold in the whipped topping, mini marshmallows, and chopped walnuts (if using) until well combined.
