Description

A refreshing and nutritious quinoa salad featuring cucumbers, cherry tomatoes, feta cheese, and fresh herbs, perfect for a light meal or side dish.


Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it cool.
  2. In a large bowl, combine the diced cucumber, cherry tomatoes, feta cheese, red onion, dill, and mint.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad mixture and toss gently to combine.
  4. Once the quinoa has cooled, fluff it with a fork and add it to the salad. Toss everything together until well mixed.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Notes

  • For added crunch, consider mixing in some chopped bell peppers or radishes.
  • Substitute the feta cheese with goat cheese for a different flavor profile.
