Description

Quick Beef and Pepper Rice Bowls are a delicious and easy dinner option, featuring ground beef, colorful bell peppers, and seasoned rice.

Ingredients

Scale
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups cooked rice (white or brown)
  • 1 cup beef broth
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes until softened.
  2. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  3. Stir in the sliced red and green bell peppers and minced garlic. Cook for another 3-4 minutes until the peppers are tender.
  4. Sprinkle in the chili powder, cumin, salt, and pepper. Mix well to combine.
  5. Pour in the beef broth, soy sauce, and Worcestershire sauce. Bring the mixture to a simmer and let it cook for about 5 minutes, allowing the flavors to meld.
  6. Serve the beef and pepper mixture over the cooked rice. Garnish with chopped cilantro if desired.

Notes

  • For a healthier option, substitute ground turkey or chicken for the beef.
  • Add a splash of lime juice before serving for a fresh, zesty flavor.
  • You can also include black beans or corn for extra texture and nutrition.
