Ingredients

  • 2 cups fresh peaches, sliced (about 4 medium peaches)
  • 1 cup granulated sugar, divided
  • 1 teaspoon lemon juice
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the sliced peaches, 1/2 cup of sugar, and lemon juice. Toss to coat the peaches evenly and set aside to marinate for about 10 minutes.
  3. In another bowl, whisk together the flour, remaining 1/2 cup of sugar, baking powder, and salt.
  4. Gradually stir in the milk, melted butter, and vanilla extract until just combined. Do not overmix; a few lumps are okay.
  5. Pour the batter into a greased 9×13-inch baking dish.
  6. Spoon the marinated peaches and their juices evenly over the batter.
  7. Sprinkle the ground cinnamon on top.
  8. Bake in the preheated oven for 40-45 minutes, or until the cobbler is golden brown and a toothpick inserted into the center comes out clean.
  9. Allow to cool for about 10 minutes before serving.

Notes

  • For a richer flavor, try adding a pinch of nutmeg along with the cinnamon.
  • You can substitute half of the peaches with blueberries or blackberries for a mixed berry cobbler.
