- 1 pound ground beef
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1/4 cup feta cheese, crumbled
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the diced red bell pepper and sliced zucchini. Cook for another 5 minutes until the vegetables are tender.
- Add the halved cherry tomatoes, dried oregano, dried basil, salt, and pepper. Cook for an additional 2-3 minutes until the tomatoes start to soften.
- Remove from heat and sprinkle the crumbled feta cheese on top. Garnish with fresh parsley before serving.
Notes
- For a spicier kick, add red pepper flakes or diced jalapeños while cooking the beef.
- Substitute ground turkey or chicken for a leaner option, and consider adding spinach or kale for extra greens.
