  • 1/4 teaspoon cayenne pepper (optional for heat)

Instructions

  1. In a large mixing bowl, combine the ground pork, maple syrup, salt, black pepper, sage, thyme, garlic powder, onion powder, and cayenne pepper (if using). Mix well until all ingredients are fully incorporated.
  2. Cover the mixture with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
  3. After chilling, shape the sausage mixture into patties, about 2-3 inches in diameter. You should get approximately 8-10 patties.
  4. Heat the olive oil in a large skillet over medium heat. Once hot, add the sausage patties in a single layer, making sure not to overcrowd the pan.
  5. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 160°F).
  6. Remove the patties from the skillet and let them rest on a paper towel-lined plate to absorb excess oil. Serve warm.
