- 2 large russet potatoes
- 2 tablespoons olive oil

- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled

- 1/4 cup sour cream
- 1/4 cup jalapeños, sliced (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and scrub the russet potatoes thoroughly. Cut them into thin strips to create fries.
- In a large bowl, toss the potato strips with olive oil, salt, and black pepper until evenly coated.
- Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
- Remove the fries from the oven and sprinkle the shredded cheddar cheese evenly over the top. Add the crumbled bacon. Return to the oven for an additional 5 minutes or until the cheese is melted.
- Once out of the oven, top with sliced green onions, sour cream, and jalapeños if desired. Serve immediately.
