- 2 cups plain Greek yogurt
- 1 cup granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, melted and cooled
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan. Line the bottom with parchment paper for easier removal.
- In a large mixing bowl, whisk together the Greek yogurt and granulated sugar until smooth.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, combine the baking powder, salt, and flour. Gradually add this dry mixture to the yogurt mixture, stirring until just combined.
- Gently fold in the melted butter until fully incorporated. Be careful not to overmix.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Once cooled, dust the top with powdered sugar if desired before serving.
Notes
- For a citrus twist, add the zest of one lemon or orange to the batter.
- Serve with fresh berries or a dollop of whipped cream for added flavor and presentation.
