- 2 pounds boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 teaspoon lemon zest
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt and black pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1 minute, until fragrant.
- Stir in the lemon juice and lemon zest, scraping up any browned bits from the bottom of the skillet. Let the sauce simmer for about 2 minutes.
- Return the chicken to the skillet, spooning the garlic butter sauce over the top. Cook for an additional 2-3 minutes to heat through.
- Garnish with fresh parsley before serving.
Notes
- For a little heat, add a pinch of red pepper flakes to the garlic butter sauce.
- Serve the chicken over a bed of steamed vegetables or rice to make it a complete meal.
