Description
A delicious breakfast sandwich made with leftover pancakes, eggs, and bacon or sausage, drizzled with maple syrup.

- 2 large pancakes (leftover or freshly made)
- 2 large eggs
- 4 slices of cooked bacon or sausage patties
- 1/2 cup shredded cheddar cheese
- 1 tablespoon butter
- Maple syrup (for drizzling)
- Salt and pepper (to taste)
Instructions
- If using leftover pancakes, heat them in a skillet over medium heat until warm. If making fresh pancakes, prepare them according to your favorite recipe and set aside.
- In a separate skillet, melt the butter over medium heat. Crack the eggs into the skillet and season with salt and pepper. Cook to your desired doneness (sunny-side up, over-easy, or scrambled).
- While the eggs are cooking, place one pancake on a plate. Layer with two slices of bacon or a sausage patty, followed by half of the shredded cheddar cheese.
- Once the eggs are cooked, place one egg on top of the cheese layer. Add the second pancake on top to create a sandwich.
- Repeat the layering process for the second sandwich. Drizzle with maple syrup before serving.
Notes
- For a healthier twist, substitute turkey bacon or a veggie sausage patty.
- Add sliced avocado or fresh spinach for extra flavor and nutrition.
