Description

Hunter’s Chicken, also known as Chicken Chasseur, is a savory dish featuring chicken breasts cooked in a flavorful sauce with mushrooms, onions, and a hint of white wine.


Ingredients

  • 3 tablespoons olive oil
  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 cup chicken broth
  • 1/2 cup dry white wine
  • 1 tablespoon Dijon mustard
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 5-6 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and sliced mushrooms, cooking for an additional 5 minutes until the mushrooms are browned.
  3. Pour in the chicken broth and white wine, scraping the bottom of the skillet to release any browned bits. Stir in the Dijon mustard, tomato paste, and dried thyme. Bring the mixture to a simmer.
  4. Return the chicken to the skillet, spooning some of the sauce over the top. Cover and let simmer for 10 minutes to allow the flavors to meld.
  5. Before serving, sprinkle with fresh parsley for garnish.

Notes

  • For a creamier sauce, stir in 1/4 cup of heavy cream just before serving.
  • Serve over rice or pasta to soak up the delicious sauce, or pair with a side of steamed vegetables for a complete meal.
