A delicious and spicy pasta salad featuring cheese tortellini, fresh vegetables, and a sweet and spicy hot honey dressing.
Ingredients

- 8 ounces cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons hot honey
- 1 tablespoon red wine vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook the cheese tortellini according to package instructions. Drain and rinse under cold water to cool. Set aside.
- In a large bowl, combine the cherry tomatoes, cucumber, red onion, feta cheese, and fresh basil.
- In a small bowl, whisk together the olive oil, hot honey, red wine vinegar, garlic powder, salt, and pepper until well combined.
- Add the cooled tortellini to the vegetable mixture and pour the dressing over the top. Toss gently to combine all ingredients.
- Let the salad sit for at least 15 minutes to allow the flavors to meld before serving.
Notes
- For added protein, consider mixing in grilled chicken or chickpeas.
- Substitute the hot honey with regular honey and add a pinch of red pepper flakes for a milder version.
