- 2 cups cottage cheese
- 1 cup shredded cheddar cheese
- 1 cup chopped spinach (fresh or frozen)
- 1 cup diced bell peppers (any color)
- 1 cup diced tomatoes (fresh or canned)
- 1/2 cup chopped onion
- 4 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with olive oil.
- In a large mixing bowl, combine the cottage cheese, shredded cheddar cheese, chopped spinach, diced bell peppers, diced tomatoes, and chopped onion. Stir until well mixed.
- In a separate bowl, whisk together the eggs, garlic powder, onion powder, salt, black pepper, and red pepper flakes (if using). Pour the egg mixture into the vegetable mixture and stir until everything is evenly coated.
- Pour the mixture into the prepared baking dish and spread it out evenly.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the center is set.
- Allow to cool for 5-10 minutes before slicing and serving.
Notes
- For an extra flavor boost, try adding cooked bacon or sausage to the mixture.
- You can also substitute the vegetables with your favorites, such as zucchini or mushrooms, for a different twist.
