- 1 pound ground turkey
- 1 medium onion, diced
- 2 bell peppers (any color), diced
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (14.5 ounces) diced tomatoes, drained
- 1 cup corn (fresh, frozen, or canned)
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Increase the heat to medium-high and add the ground turkey. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.
- Stir in the diced bell peppers, smoked paprika, oregano, salt, and black pepper. Cook for another 5 minutes until the peppers are tender.
- Add the drained diced tomatoes and corn to the skillet. Stir well and cook for an additional 3-4 minutes until heated through.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- For added flavor, try incorporating a teaspoon of chili powder for some heat.
- Serve with a dollop of Greek yogurt on top.
- You can substitute ground turkey with ground chicken or beef for a different taste.
