Description

A delicious and easy recipe for grilled zucchini seasoned with garlic and topped with Parmesan cheese.

Ingredients

Scale
  • 2 medium zucchinis, sliced into 1/4-inch thick rounds
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a large bowl, combine the sliced zucchini, olive oil, garlic powder, salt, and black pepper. Toss until the zucchini is evenly coated.
  3. Place the zucchini slices directly on the grill grates. Grill for about 3-4 minutes on each side, or until they are tender and have nice grill marks.
  4. Once grilled, remove the zucchini from the grill and sprinkle with grated Parmesan cheese while still warm.
  5. If desired, garnish with fresh parsley before serving.

Notes

  • For a smoky flavor, try adding a pinch of smoked paprika to the zucchini mixture before grilling.
  • You can also substitute the Parmesan with crumbled feta cheese for a different taste.
