A delicious and easy recipe for grilled zucchini seasoned with garlic and topped with Parmesan cheese.

- 2 medium zucchinis, sliced into 1/4-inch thick rounds
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped (optional for garnish)
Instructions
- Preheat your grill to medium-high heat.
- In a large bowl, combine the sliced zucchini, olive oil, garlic powder, salt, and black pepper. Toss until the zucchini is evenly coated.
- Place the zucchini slices directly on the grill grates. Grill for about 3-4 minutes on each side, or until they are tender and have nice grill marks.
- Once grilled, remove the zucchini from the grill and sprinkle with grated Parmesan cheese while still warm.
- If desired, garnish with fresh parsley before serving.
Notes
- For a smoky flavor, try adding a pinch of smoked paprika to the zucchini mixture before grilling.
- You can also substitute the Parmesan with crumbled feta cheese for a different taste.
