A refreshing and vibrant salad featuring rice noodles and a variety of fresh vegetables, topped with a spicy ginger dressing.
Ingredients

- 1 cup rice noodles
- 2 cups shredded green cabbage
- 1 cup shredded carrots
- 1 cup sliced bell peppers (any color)
- 1 cup cucumber, thinly sliced
- 1 cup fresh cilantro leaves
- 1 cup fresh mint leaves
- 1 avocado, diced
- 1/4 cup chopped peanuts (optional)
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1 tablespoon fresh ginger, grated
- 1 clove garlic, minced
- 1 teaspoon sriracha (adjust to taste)
- 1 teaspoon lime juice
Instructions
- Cook the rice noodles according to package instructions. Drain and rinse under cold water to cool. Set aside.
- In a large bowl, combine the shredded cabbage, carrots, bell peppers, cucumber, cilantro, mint, and avocado.
- In a separate bowl, whisk together all the ingredients for the spicy ginger dressing until well combined.
- Add the cooled rice noodles to the vegetable mixture and pour the dressing over the top. Toss gently to combine all ingredients.
- If using, sprinkle chopped peanuts on top before serving.
Notes
- For added protein, consider adding grilled chicken, shrimp, or tofu to the salad.
- Substitute the rice noodles with quinoa or a mix of leafy greens for a different texture and flavor.
