- 2 large eggs
- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt

Instructions
- In a large mixing bowl, combine the cottage cheese and eggs. Mix until well blended.
- Add the flour, sugar, baking powder, vanilla extract, and salt to the bowl. Stir until just combined; the batter will be slightly lumpy.
- Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil.
- Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook for about 3-4 minutes, or until bubbles form on the surface and the edges look set.
- Carefully flip the pancakes and cook for an additional 2-3 minutes, or until golden brown.
- Remove from the skillet and keep warm while you cook the remaining batter.
- Serve warm, dusted with powdered sugar and topped with fresh fruit or syrup if desired.
Notes
- For a lighter version, substitute half of the cottage cheese with Greek yogurt.
- For a flavor twist, add a teaspoon of lemon zest to the batter.
