Description

Fiesta Lime Chicken is a flavorful dish featuring grilled chicken breasts seasoned with a blend of spices, served over a vibrant rice and bean mixture, topped with cheese and fresh cilantro.


Ingredients

  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup cooked rice (white or brown)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes (fresh or canned)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Sour cream for serving (optional)

Instructions

  1. Preheat your grill or stovetop grill pan over medium-high heat.
  2. In a small bowl, mix together garlic powder, onion powder, chili powder, cumin, paprika, salt, and pepper. Rub this spice mixture evenly over both sides of the chicken breasts.
  3. Drizzle olive oil on the grill or grill pan. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from heat and let rest for 5 minutes.
  4. While the chicken is resting, combine the cooked rice, black beans, corn, diced tomatoes, cilantro, and lime juice in a large bowl. Mix well to combine.
  5. Slice the grilled chicken and serve it over the rice mixture. Top with shredded cheddar cheese and a dollop of sour cream if desired.
  6. Garnish with additional cilantro and lime wedges for extra flavor.

Notes

  • For a spicier version, add diced jalapeños to the rice mixture.
