Description

A refreshing summer beverage made with cucumbers and mint, perfect for hot days.


Ingredients

Scale
  • 2 large cucumbers, peeled and chopped
  • 1 cup fresh mint leaves, packed
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/4 cup honey or agave syrup (adjust to taste)
  • 4 cups cold water
  • Ice cubes
  • Mint sprigs and cucumber slices for garnish

Instructions

  1. In a blender, combine the chopped cucumbers, fresh mint leaves, lime juice, and honey or agave syrup. Blend until smooth.
  2. Strain the mixture through a fine mesh sieve into a large pitcher to remove the pulp. Use a spatula to press down and extract as much liquid as possible.
  3. Add the cold water to the pitcher and stir well to combine. Taste and adjust sweetness if needed.
  4. Chill the mixture in the refrigerator for at least 30 minutes to allow the flavors to meld.
  5. Serve over ice cubes and garnish with mint sprigs and cucumber slices.

Notes

  • For a sparkling version, replace half of the cold water with club soda or sparkling water just before serving.
