Ingredients

  • 1 large egg
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)
  • Lemon wedges (for serving)

Instructions

  1. In a large bowl, combine the flaked salmon, breadcrumbs, mayonnaise, onion, bell pepper, egg, Dijon mustard, garlic powder, salt, and black pepper. Mix until well combined.
  2. Shape the mixture into patties, about 2-3 inches in diameter. You should have about 8 patties.
  3. Heat olive oil in a large skillet over medium heat. Once hot, add the salmon patties to the skillet, cooking in batches if necessary to avoid overcrowding.
  4. Cook for 4-5 minutes on each side, or until golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
  5. Serve warm with lemon wedges on the side.
