Description

Crispy Potato Lollipops are a delicious and fun snack made from mashed potatoes, cheese, and spices, shaped into lollipops and fried until golden brown.


Ingredients

  • 2 cups mashed potatoes (about 2 large potatoes)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup finely chopped green onions
  • 1/4 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • 1 large egg, beaten
  • Vegetable oil for frying
  • Lollipop sticks or skewers

Instructions

  1. In a large bowl, combine the mashed potatoes, cheddar cheese, green onions, garlic powder, onion powder, salt, black pepper, and paprika. Mix until well combined.
  2. Take a small portion of the potato mixture (about 2 tablespoons) and shape it into a ball. Insert a lollipop stick or skewer into the center of each ball, then flatten slightly to form a lollipop shape. Repeat with the remaining mixture.
  3. Dip each lollipop into the beaten egg, ensuring it’s fully coated, then roll it in breadcrumbs until evenly covered.
  4. Heat about 1 inch of vegetable oil in a deep skillet over medium heat. Once the oil is hot, carefully add the lollipops in batches, frying until golden brown on all sides, about 3-4 minutes. Remove and drain on paper towels.
  5. Serve warm with your favorite dipping sauce.

Notes

  • For a spicy kick, add 1/4 teaspoon of cayenne pepper to the potato mixture.
  • To make these lollipops healthier, bake them in a preheated oven at 400°F for 20-25 minutes instead of frying.
