- 2 tablespoons fresh parsley, chopped
- 1 lemon, cut into wedges
Instructions
- Preheat your oven to 425°F.
- Wash and peel the potatoes, then cut them into thin strips, about 1/4 inch thick.
- In a large bowl, toss the potato strips with olive oil, garlic powder, oregano, salt, and black pepper until evenly coated.
- Spread the fries in a single layer on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 30-35 minutes, flipping halfway through, until golden brown and crispy.
- Remove the fries from the oven and immediately sprinkle with crumbled feta cheese and chopped parsley.
- Serve hot with lemon wedges on the side for squeezing over the fries.
Notes
- For extra flavor, try adding a pinch of smoked paprika to the seasoning mix.
- If you prefer a healthier option, you can air fry the potatoes instead of baking them for a crispier texture with less oil.
