- In another bowl, whisk the eggs and olive oil together until well combined.
- Dip each piece of chicken into the egg mixture, allowing any excess to drip off, then coat it in the breadcrumb mixture, pressing gently to adhere.
- Place the coated chicken nuggets on the prepared baking sheet in a single layer, making sure they are not touching.
- Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the nuggets are golden brown and crispy.
- For extra crispiness, you can broil the nuggets for an additional 1-2 minutes at the end of baking, but watch them closely to prevent burning.
- Let the nuggets cool for a few minutes before serving.
