- 1 medium eggplant, sliced
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 eggs, beaten
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste

Instructions
- Preheat the air fryer to 375°F (190°C).
- Slice the eggplant into 1/4 inch thick rounds.
- In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
- Dip each eggplant slice into the beaten eggs, then coat with the breadcrumb mixture.
- Arrange the coated eggplant slices in a single layer in the air fryer basket.
- Spray the eggplant slices lightly with cooking spray.
- Air fry for 12-15 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the air fryer and serve hot.
Notes
- For a vegan option, substitute eggs with a flaxseed mixture.
