- 2 cups cooked, shredded chicken
- 1 cup corn kernels (fresh, frozen, or canned)
- 1/2 cup diced red bell pepper
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup crumbled feta cheese (optional)
Instructions
- In a large mixing bowl, combine the cooked, shredded chicken, corn, red bell pepper, red onion, and cilantro.
- In a separate small bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and pepper until smooth.
- Pour the dressing over the chicken mixture and stir until everything is well coated.
- If using, gently fold in the crumbled feta cheese.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled, either on its own or in tortillas, lettuce wraps, or over a bed of greens.
Notes
- For a spicier kick, add diced jalapeños or a dash of hot sauce to the dressing.
