Ingredients

  • 1 pound ground beef or turkey
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh cilantro
  • 1 large egg
  • 2 teaspoons minced garlic
  • 1 teaspoon minced ginger
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (14 ounces) coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon vegetable oil
  • Cooked rice or quinoa, for serving

Instructions

  1. In a large bowl, combine the ground meat, breadcrumbs, Parmesan cheese, cilantro, egg, garlic, ginger, salt, and black pepper. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter. You should have approximately 20 meatballs.
  3. In a large skillet, heat the vegetable oil over medium heat. Add the meatballs and cook for about 5-7 minutes, turning occasionally, until browned on all sides.
  4. In a separate bowl, whisk together the coconut milk, red curry paste, soy sauce, and lime juice.
  5. Pour the coconut curry mixture over the meatballs in the skillet. Bring to a simmer, then reduce the heat to low. Cover and cook for an additional 10-15 minutes, until the meatballs are cooked through.
  6. Serve the meatballs over cooked rice or quinoa, garnished with additional cilantro if desired.
