Delicious and healthy muffins made with chocolate, sweet potatoes, and avocado, perfect for a nutritious snack or breakfast.


Ingredients

  • 1 cup mashed sweet potatoes (about 1 medium sweet potato)
  • 1 ripe avocado, mashed
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup almond flour
  • 1/2 cup dark chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, combine the mashed sweet potatoes and mashed avocado until smooth.
  3. Add the honey (or maple syrup), eggs, and vanilla extract to the sweet potato mixture, stirring until well combined.
  4. In a separate bowl, whisk together the cocoa powder, baking soda, baking powder, salt, and almond flour.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. If using, fold in the dark chocolate chips.
  7. Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a richer chocolate flavor, add an extra tablespoon of cocoa powder or substitute half of the almond flour with whole wheat flour.
