- 2 cups cooked quinoa
- 1 cup broccoli florets
- 1 cup diced bell peppers (any color)
- 1 cup sliced mushrooms
- 1 cup corn (frozen or canned)
- 1 cup shredded cheddar cheese
- 1 cup milk
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 teaspoon paprika (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with olive oil.
- In a large mixing bowl, combine the cooked quinoa, broccoli, bell peppers, mushrooms, corn, and half of the cheddar cheese.
- In a separate bowl, whisk together the milk, eggs, garlic powder, onion powder, salt, pepper, and paprika if using.
- Pour the egg mixture over the quinoa and vegetable mixture, stirring until everything is well combined.
- Transfer the mixture to the prepared baking dish, spreading it evenly.
- Top with the remaining cheddar cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven and let it cool for about 5 minutes before serving.
Notes
- For a spicier version, add diced jalapeños or a sprinkle of red pepper flakes.
- You can substitute the vegetables with any of your favorites, such as spinach or zucchini, for a different flavor profile.
